- Chinese Noodles – 1 pack
- ¼ Big White Onion diced
- ¼ Capsicum diced
- Veggies – carrot,cabbabe,beans,corn,peas- cubed. ( I used frozen veggie pack from walmart)
- ½ tbs – Dark soy sauce
- ¼ tbs- Chilli sauce ( Or 1 tsp of Red curry paste – from Chinese market)
- ¼ tsp – Tomato ketchup
- Pinch of Ajinomoto
- Salt to taste
- ½ tsp – Ground pepper (black / white)
- 2 tsp Oil
- 3 Eggs scrambled
Preparation:
Scrambled Egg:
Take a non stick pan and spray little oil and in the medium high flame, break & pour all the eggs with little salt and pepper (1/4 tsp together).Leave it for 2 mins without disturbing and then scramble the eggs roughly.
Take water in a saucepan and bring it to boil when its boiling high, add the noodles in to it and cover the lid for about 5 mins or until cooked in medium flame and switch off and drain it.
In a wok / large fry pan add 2tsp oil and fry the onions and capsicum for a few second.Then add all veggies to it and fry.Now add soy sauce, chilli sauce,tomato ketchup ,salt, ground pepper and ajinomoto and fry again for 3 sec on high flame.( I added chilli powder for extra hot)
Now add the cooked noodles and egg scrambles,setting the flame to high ,stir fry until all sauces are coated on the noodles..
Now the noodles is ready to be served….
