Reshmi Kebab

 Kebab is a North indian  starter / appetizer  served in Dhaba restaurants . Tandoori chicken is more spicy masala version . But this kebab and thangdi kebab are little spicy and more tasty because of the natural flavours from herbs and curd.   My Husband tried reshmi kebab  and came out very well ... really a tangy yummy starter... Here's the procedure .Try this kebab at ur home and enjoy !
Ingredients:
    For Marinate:
  1.  ½ kg chicken breast boneless (remove skin and cut into small pieces)
  2. 1/2 cup yogurt
  3. 3 garlic cloves and  1" piece fresh ginger   ( or 2 tbs ginger garlic paste)
  4. 1/4 cup mint and corriender leaves chopped finely
  5. 2 green chillies chopped finely ( preferably thai chillies )
  6. 2 tsp salt
  7. 1/2 tsp red chilly powder
  8. 2tbs lemon juices
  9. 3/4 tsp garam masala
  For Grilling:
  1. 1 Onion  diced
  2. 1 Green capsicum diced
  3. Onion , and lettuce sliced for serving
  4. Bamboo  skewers ( soaked in water for ½ hr – to avoid burning )
  5. Butter for brushing ( optional)  
Preparation :
  • Marinate the chicken pieces with all the ingredients mentioned  above for 7-8 hours .
                                   
                                     
  • Then take the bamboo skewers and arrange the chicken pieces ,diced onion and capsicum  one by one. (Onion & capsicum should be brushed with little butter before broiling)
  • Place all the skewers in a large baking pan , leave enough space for each skewers .
  • Keep the oven settings to broil and place the baking pan in the middle rack( to avoid burning)
  • Set the timer for 10 mins. Check it for every 3 – 4 mins and rotate the skewers ..
  • Once all the juice from the chicken comes out , (chicken pieces becomes small in size) brush it with butter ( if needed ).
  • After 10 mins , U can see the lightly browned edges of the chicken .
  • Now take it out and serve it with slices of onion and lettuce .
