Onion Pakoda:

Onion pakoda doesn't need much introduction as its the best tea time snack.Easy & quick to prepare when we have sudden guest.


Ingredients:

1 1/4 Cup Besan (Kadalai maavu)
1/2 Cup Rice Flour (Arusi maavu)
Salt to taste
1 Red Onion (this gives good taste compared to white onion)
2 Green chillies
4 Garlic
1 tsp Chopped Ginger
Pinch of Asafoetida
Few Chopped Cilantro
Oil to fry

Preparation:

Mix the besan,rice flour ,salt and hing.
Chop the onions lengthwise in to medium pieces and add to the besan mix immediately.
Finely chop the green chillies and ginger & roughly crush the garlic and add to the onion mix with cilantro.
Leave it for 15 mins.
**No need to add water.

Water from the onion comes out and will bind to the flour.All we have to do is toss it for every 5 mins to get evenly coated.
Meanwhile heat the oil.
Check for the correct temperature by dropping a few,if it goes down ,then u need to wait somemore time.If the pakodas float and the bubbling starts,then its the correct temperature.
Set the temperature to medium-high.
Take a small batch of the onion mix and spread evenly in the hot oil.(Take care of ur hands, oil will start bubbling once u drop the pakoda mix)
This will take 5 mins to cook.
All the bubbles will stop slowly, and the color changes to golden brown,that indicates pakodas are cooked.
Take and drain it in a paper towel.
Do it for the rest of the mix.

Enjoy a rainy evening with hot pakodas and a cup of tea :)
