Muttai Thokku / Egg Masala / Egg Curry :

Ingredients:

                                          5 Boiled eggs -Sliced
 1 Big Red onion chopped
 1 Big Tomato chopped
 2  Garlic pieces
 Ginger Garlic paste
 1/2 tsp  Cumin seeds
 1/2 tsp Mustard seeds
 1 tbs Red chilli powder
 1 tbs Sambar powder  ( Or add 1tbs of coriander powder + extra 1 tbs red chilli powder)
 Salt
 2 tbs oil
                            


Preparation:

         Add oil to a non stick pan and add mustard seeds and cumin seeds,once the seeds popped add the crushed garlic pieces and fry then add the ginger garlic paste and fry for 3 secs ,then add the chopped onions and cook covered for 3-5mins in med-high flame.
      Once the onion changes color and becomes soft,add the chopped tomatoes ,salt and cook covered for 3mins.Tomatoes should get mashed and the oil should seperate from it.Now add the masala powders and fry until the raw smell goes..
                                                                                             
   Then sprinkle some water and add the eggs to it .Now reduce the flame to medium - low and cook for about 5 mins or until the masala goes inside the egg yolks.
  Serve muttai thokku with hot rice and chapatis :)  This is one of our favourite dish learned from my mother-in-law.
